January Birthday Weekend

January is one of the months with many birthdays around the Paulsen clan.  The 15th is Maria's, the 18th is Dale's, and the 21st is Andrew's.  This year, we all got together the weekend after the birthdays to celebrate together.

Since Mimi and Pappy had visited New York (and Connecticut), they brought tshirts back for the boys (and Bekah got a little white fuzzy dog in a purse and Baby got a 6mo onsie that says "I ♥ Dad...New York").
Elijah and James in their NY shirts
Elijah, Nathan, & James in their NY shirts...
Nathan is fist-pumping because they were yelling
"BATMAN!" instead of "cheese".
And they all wrestled with Pappy after breakfast cinnamon rolls.

Tim, Daniel, and Andrew went on a mountain bike ride, so the rest of us took the kids and doggies down to "feed the duck-ducks" (aka seagulls) at the bay, and then went to the school to play on the playground.

Bekah with her Mimi (and Elijah)!
Nathan takes this seriously (okay, and he was
on some Benadryl).
We must have looked hilarious on our walk.  An almost 5-year-old in an adult helmet on a bike (until he walked and Pappy dragged the bike), 2 strollers, and 5 dogs!
Kensi, Cole, & Samson waiting patiently for Schatzi (and Pappy,
who had the ball and frisbee).

Doggies all going crazy!
Kensi jumping for the frisbee in Pappy's hand.
Cole's usually business...barking at Schatzi when she has the
frisbee.
For lunch after the brothers got back from their bike ride, we went to Dockside in Morro Bay.  Out back of the restaurant, they were unloading crab from a ship, so we took the kids outside to watch.

Nathan, Maria, and James watching the crab be put in buckets
onto the scale to be weighed.
Bekah got some birthday cake!
Dale's little sister Aunt Lynn joined us for dinner and we had (Andrew's choice) tamale pie, followed by lemon meringue pie I made for Dale and grasshopper pie Emily had made for Andrew.  YUM!

Lemon Meringue Pie (without zest of finger)

This is my dad, my grandPa, and my father-in-law's favorite pie.  If you love lemon bars, you will love this pie.  End of story.  I made it this past weekend for my father-in-law Dale's birthday.

Lemon Meringue Pie
For the pie filling:
1 1/2 c. sugar
2 T butter
6 T cornstarch (aka 1/4c. + 2T)
1/4 t. salt
1 1/2 c. boiling water
1 t. lemon zest
1/2 c. lemon juice (I fresh-squeeze mine, usually takes two lemons)
3 beaten egg yolks
1/2 c. cold water

For the meringue:
4 egg whites
 6T sugar
1/4 t. cream of tartar

and 1 cooked pie crust to put it in!

Separate the eggs, putting the egg whites into your stand mixer (or bowl you will use for making the meringue), and 3 of the egg yolks into a small bowl.  Beat the egg yolks with a fork.
Start boiling some water (I use our tea kettle).  In a saucepan, stir together sugar, salt, and cornstarch.
Juice the lemons into a measuring cup.  I use this lime squeezer, it works just fine if you squeeze the lemons both ways, meaning squeeze them pulp-side up, and then pulp-side down to get all the juice out.  Two lemons usually gets me 1/2 cup.
Use a spoon to scoop out any seeds that got into the lemon juice, but don't worry about a little bit of pulp.  You are going to add lemon zest so a few lumps won't matter anyways.
Zest the lemons.  Usually I do this before juicing them (it's easier).  I have this fancy zester that my mom got me for Christmas one year.  Just be careful not to zest your finger into the pie!!! This advice comes from experience.  Cut finger + lemon juice = pain!
Pour the cold water, lemon juice, and beaten egg yolks into the saucepan with the dry ingredients.
Add the butter.  Turn burner of stove onto medium heat.
When the water boils, add the 1 1/2 cups boiling water gradually.  Bring to a boil, stirring constantly.
It will get thick right before it boils, and the bubbles will make popping sounds.  Boil for 3 minutes, still stirring.
Remove from stove and stir in lemon zest.  Cool while preparing meringue.
Beat egg whites at high speed until frothy and forms soft peaks (shown below).
Add 6T sugar and cream of tartar and beat until stiff and not dry.  I know it's done when I pull up the stand mixer head and the meringue holds it's form in a peak where the wire whisk was removed.
Pour cooled pie filling into baked pie crust.
Spread meringue on top, using spatula to make waves and patterns.  Make sure edges of meringue are "sealed" against the pie crust.
In the Jones family, we top all our meringue pies with a Pie Pip (shown below).  The contest is to see who can steal the Pie Pip from the top of the pie (well, Auntie Wendy and Dad compete).
Bake the pie with meringue in the oven at 350℉ for 12-15 minutes, until the meringue is light brown on the higher parts.

My perfect Pie Pip (no one on the Paulsen side knows to
steal it though).

Herbed Cheesecake Cracker Dip

For Women's Bible Study at church, we take turns bringing snacks.  This week was my week.  Shayna and I joked about doing something from Pinterest, and I was about to go against that and do something from my recipe box when I looked in my pantry and noticed how many boxes of crackers we have (that we don't eat).  So off I went to Pinterest to find a cracker dip.  I found this one:

Herbed Cheesecake Cracker Dip
modified from The Artistic Farmer

Ingredients:
24oz cream cheese
3 T flour
4 eggs
1 c. grated Parmesan cheese
1 t. dried basil
1 t. dried oregano
1 t. dried thyme
1 t. dried crushed rosemary
4 t. minced garlic (or 2 cloves minced)
1 1/2 T dried minced onion

crackers for dipping.

First, cream the cream cheese and flour together.
Then, add the eggs and beat until incorporated and smooth.
Add all the spices.
Add the parmesan cheese last.
Pour into greased baking dish (9x9) size-ish.

As always, doggie-approved food.
Bake for 55+minutes at 325℉ until edges are slightly brown and middle doesn't look sticky any more.
Preggo-brain forgot to take a picture of it after it was cooked.  Sorry!

It turned out really yummy!!!  And there was left overs from Bible Study so I brought some home to Tim (and we took it to the Miller's and had it as an appetizer before Carlene's yummy pot pie).

Third Trimester.

WOOHOO!!!  The beginning of the third trimester!!!

My phone app says 27w1d and calls it the third trimester.  I don't care if you disagree (or if I disagree).
But that means its almost over.

Yeah, yeah, yeah.  I know.  I have 12 weeks or more left.  I could be the tiredest I've been.  I could be the most uncomfortable I've been.  I will probably have to stop running (picture 2 boxers looking sad at this...oh wait, its not hard for boxers to look sad!).

The details:

  • Week:  27w1d
  • ETA:  April 25th.  Oh please oh please before then!
  • Size:  head of cauliflower (16in, 2.5lbs)...what does this even mean!?!?!  I don't even know what size a head of cauliflower is!!!  How about I just say, "fits in my belly still"?
  • Best part so far:  Still running.  Breaking up my runs into segments with a little walk in between has been one of the best decisions I have made!!!  I'm still able to get out and go run and make the doggies happy and feel good about accomplishing something.
  • Hardest part so far:  Deciding what to wear if it's not a tank top and yoga pants.  I know I could just keep trying things on but I don't even want to try things on that might not fit...tops are beginning to be too short.
  • Weirdest part so far:  The 10# difference between my home scale and the scale at the midwives...what do I really weigh and how much am I going to have to lose after???

At least we'll be busy for the next 3 months (that makes it sound way longer than 12 weeks).  The increasing frequency of doctors appointments, all the birthdays I listed before, and birthing class during February.  I can't wait...meaning I can't wait to check off every day like I enjoy crossing things off my to-do list!!!

Caprese Soup

Today, being Saturday, is one of those days where Tim is off work and I actually have to plan something/make something substantial for lunch.  None of this just eat tangerines and yogurt and milk and apple and pretzels.  I always try to use whats in the house, but not something that we would make for dinner.

Today I made-up some Caprese Soup to go with our grilled cheese!

Packers & Seahawks Chocolate Chip Cookie Dough filled Cupcakes

On Saturday, the Packers lost.  On Sunday, the Seahawks lost.  Two of my husband's best friends were devastated.  So he texted them, asking if they should get together and wear sackcloth and weep.
So due to Bible Study being cancelled on Monday night, we got together for dinner and I was assigned dessert.  Tim told me that I had all day at home to make a good dessert.
I came up with this:

Twenty-five weeks and Counting Down!

Week 25 and we FINALLY got to see our 20week pictures of Baby Paulsen.  At 5 weeks later, it had definitely lost its excitement for Tim and I.  We looked at the pictures and said, "well, there aren't really any good ones..." and I think maybe if we got pictures while we were there, we would have asked for some pictures, say, with a little personality, like, when Baby was sticking it's little tongue out.

"Who does it look like?"  ...Yeah, like we know
