Nathan turns 3!

Even though it's not officially Nathan's birthday yet, we celebrated his third birthday at Mimi and Pappy's this past weekend.  Aunt Maria and James and Bekah came too (but Uncle Daniel had football games and parades and competitions for his school's band).

Here are some highlights:
Uncle Andrew, Elijah, and Nathan taught James and Bekah to play Uno!

We had a dinosaur themed party for Nathan, so Maria and Charlotte helped me decorate this dinosaur cake for Nathan (who loved it).  It had palm trees, birds, a dinosaur nest with eggs in it, and a volcano on the sides.

It was so warm on Saturday that we went to the beach north of Morro Bay.

Sweet Bekah...couldn't resist texting this one to her Daddy!

On Sunday we had cinnamon rolls for breakfast in the Paulsen birthday tradition!

How the Dogs got Chicken & Potatoes for Dinner

So last Friday, Tim had the day off work so we spent the day doing chores around the house, going to Home Depot, and shopping for a birthday present for our nephew Nathan.  I decided to make Tim these potatoes we had kind of made up when the Hasenfus came over for dinner the other week, along with some chicken.  So I boiled the potatoes and marinated the chicken and preheated the oven.

We have a terrible oven.  When we moved in, the first time I used it it was really hot, on the outside.  Like the kind of hot I don't want to touch and definitely don't want the doggies noses to touch.  So I Facebooked our family friend Laurie whose family owns The Factory Applicances, and she said that it just wasn't a good brand, but don't buy a new one until it really breaks.  So oven was fine besides being hot, until recently, I guess we make potatoes in olive oil often enough that it got spattered all over the oven enough to start making it dirty and smokey, only I didn't know it was smokey until the smoke detector in the hall started going off every single time I opened my oven!  So last time I cooked, I just took it down and pulled out the battery.

I guess I forgot about the smokey oven in my happiness of making Tim yummy potatoes.  I put the chicken and potatoes in, and some time later went to check on them.  The marinade around the chicken was getting brown and maybe smokey, yup, about 30 seconds after I closed the oven, the smoke detector in the hall went off.  They really, really hurt my ear, like make me want to cry hurt.  I stood on a chair, pulled out the pin, twisted the smoke detector off, opened it, and pulled out the battery.  Ha.  Beat you smoke detector!

The the smoke detector in the entry way went off.  I waved a magazine at it.  No other smoke detectors had gone off before this!  That one went off again, and I dismantled it, starting to get angry.  Then the one at the end of the hall in our room went off, and as soon as I got that one down, the one in the baby's room went off.  At this point, I could not believe how many smoke detectors this house had!!!  They're like, 4 feet from each other!!! Tim came back in the house at this point, and I screamed at him as another one went off,  "I don't even know where it's coming from!!!"

At this point I was so angry that I opened the oven and, seeing the marinade around the chicken smoking, I grabbed hot pads and opened the patio door and threw the chicken and potato pans outside on the patio and slammed the door, throwing the hot pads on the floor too, and retreated to the driveway outside (ie. the only place far, far away from any unknown smoke detectors).  After I had a cry, I came back inside, where Tim now had fans going and every window and door open.

He informed me that when I put the chicken and potatoes outside, the dogs were outside.  He had just come inside from giving them dinner.  Of course being the starving beasts that they are, Cole and Kensi ate the chicken and then were working on the potatoes when Tim saw them and went and took the pan.   This made me cry even more that our dinner was now unsalvageable, and the doggies probably burnt their tongues.

We ended up having In-N-Out for dinner (because Orcutt Burger was not taking cards).

We think Kensi did burn her tongue, even after giving them some milk she sat all evening licking her lips.

They didn't get breakfast the next morning.  They still looked full from the night before.

And I need to clean my oven.  Good thing I don't plan on using it until Thursday.  Does chicken cook in a toaster oven???

Happy Belated Birthday Daniel...

This past weekend we gathered in Los Osos to celebrate Daniel's birthday...belated and even though we had all already celebrated his birthday with him separately. I think he got cinnamon rolls 4 times out of this deal somehow...hmm.

Some highlights of the weekend:

  • Double dinner date with Daniel & Maria at Sushiya! Yum!
  • Daniel got a new mountain bike!  Everyone rode it (ok not me)!

  • Cole is now tall enough to peek over the gate!

  • Doggies at the park (of course)!

  • We found a soccer ball at the school field and figured out that our baby will be a forward and great dribbler because Cole likes to play defender (until he popped it)!

  • Poppop & Carolyn came for fondue and artichokes on Saturday night!
  • "Hiding" Schatzi's frisbee on top of a pole (yes, torture)!

God knows better than us

Today as I drove to Target, I drove by some of the streets that we looked at houses on back in the spring, and I was reminded how
God knows better than us.
I thought about each of the houses as I drove by.  I really, really wanted the Woodmere house, it was one of the first we looked at in our price range and we even took both our parents to see it.  We thought about making an offer on it, but then before we even got home that evening, we found out another offer had been accepted on it.  I was devastated.
We started looking at more houses, and looked at a house on Blue  Ridge that Tim in particular really liked.  It was bigger, with a bigger back yard, in a nicer neighborhood, but more expensive, and further into the middle of Santa Maria, meaning we wouldn't be in the Orcutt school district, and it wouldn't cut off as much of Tim's commute as living in Orcutt proper would.  We decided to wait it out.
Then we found out that the people who had the offer on Woodmere may be backing out due to arguing with the sellers.  I felt like God must want us to have the house!!!  We put in a backup offer and it was strong.  Through much confusion and poor communication with our realtor, we found out there was never really any possibility of getting the house, and the other offer closed.
After many tears from me, we switched realtors to Dianna Vonderheide with King Properties.  The difference was amazing!!!  She's our generation and carries an iPhone, and told us to email and text her, and she always got right back to us, when we did put in an offer, we used DocuSign on my phone to sign the papers while we were out to dinner in SLO with my family!
Our first time meeting with her, we visited maybe 5 houses, one of which we had seen before but it had fallen out of Escrow.  It was a house on Mountain View in Orcutt that I had liked before, it was move in ready aside from the backyard, but it was a little more expensive.  We put in an offer on this house.  The sellers asked for "best offers" because they said they had 5 good offers.  We debated about moving our numbers up, or trusting that God would just get the house for us, but after a couple days of prayer, we decided that we had to put a little more money in to show God that we were willing to sacrifice, but we weren't going up to the said "guarantee" price, because we also wanted to know that if we got the house it was because
GOD GOT US THE HOUSE.
Our numbers ended up being a combination of Tim and Drew's lucky numbers, and our offer was accepted.  We love where we are living.  Now that we put grass in the backyard, Cole and Kensi love it too.  We are 5 minutes away from the Millers; we live right off the 135 highway that Tim takes to work and he carpools now, sometimes only driving to work one day a week; my commute is shorter to work too; and this house truly feels like home, and a house we will be thrilled to have a little baby in!!!  Now I KNOW that God wanted us in this house.  And I am so thankful that He always knows better than us and takes care of us even if we don't understand!

7 Layer Dip

It should be illegal to be 90℉ thirteen days before November.  Someone arrest global warming.

my sister, Outdoor Education naturalist at Mission Springs

So it's been a billion degrees here the last few days, and due to the fact that my fail oven heats up the whole house, I haven't wanted to turn it on. Yesterday that and a headache got us In-N-Out for dinner (and baby inspired me to eat my first ever Double-Double, I also needed some protein BADLY)! Today I made my yesterday's original plan B dinner plan: 7 Layer Dip made from leftovers from Mexi Monday! I was inspired by the sight of 7 layer dip at Trader Joe's but otherwise I just layered in all the stuff we have at home!

Leftovers 7 Layer Dip

  • Refried beans
  • Cheese
  • Shredded beef
  • Sour cream
  • Cheese (2 layers, I am a Jones)
  • Salsa
  • Cilantro
  • Red onions
  • Avocado (not pictured, I'll add it later so it doesn't get brown!)

And we'll eat it with my favorite chips, the organic white corn ones from Trader Joe's:)

No More Bananas

Last Thursday started off as a GREAT day...meaning, I was supposed to work at 6am, and got called off until 7am.  Then, when my alarm clock woke me up, I woke up to seeing lightning out the window (we still don't have curtains).  I got up, pet the dogs, ate some rice pudding and orange juice, and grabbed a banana to go.  I didn't have time to eat my Cheerios because it took 3 outfits to find something that looked good.
I got in the car and started driving to work, and peeled my banana and started eating it.  A little background here:  bananas and I do not always get along.  I only like them when they are a little green with absolutely no brown spots and no bruising.  I don't eat the "end" that has the little prickly in it.  Some times bananas, even perfect ones, make me gag, but mostly through this pregnancy I've been able to take a deep breath and force my banana down.  And up to this point, I have not thrown up yet while being pregnant.  Ha.
